Multi-unit restaurant chains are still largely fighting stockouts with spreadsheets, phone calls, and reactive firefighting. Sightline OS, the inventory and supply chain platform built for restaurant groups, is moving to change that with the launch of Continuity AI — a reasoning engine embedded in its platform that identifies supply gap risks up to 12 weeks in advance, quantifies disruption severity, and delivers concrete next-best-action guidance before an outage reaches the dining room.
What the Engine Does
Continuity AI activates automatically the moment an inventory escalation is flagged inside Sightline OS. For each issue, it generates an Impact Score on a 0–100 scale with a Critical/High/Medium/Low label, so supply chain teams can instantly triage across their full item catalog without manual investigation. The system also issues a Mitigation Outlook — classifying each risk as Preventable, Partially Preventable, or Unavoidable — so teams know whether acting now can still change the outcome. Next Best Action recommendations are specific and operational: place a new purchase order, expedite an order already in transit, and sized to the exact case count needed. A Recommended Timing read tells teams whether a corrective action will actually arrive before the outage hits.
The engine is also designed to distinguish between noise and genuine systemic risk. A temporary gap with an inbound replenishment order already in motion scores materially lower than a prolonged outage with additional stockouts projected behind it — turning a raw alert into a prioritization tool rather than another source of alarm fatigue.
Bonchon Results
Sightline OS's work with Korean fried chicken chain Bonchon provides the clearest early proof point. Since deploying the platform, Bonchon's system-wide weighted average distributor fill rate climbed 1.1 percentage points to 99.3%, while product substitutions fell across a network of more than 150 restaurants and 35 distributor operating companies. "With greater visibility across our distribution network and stronger forecasting capabilities, our team can identify potential inventory challenges earlier, collaborate more effectively with our partners, and improve supply reliability for our franchisees," said Suzie Tsai, CEO of Bonchon. "That translates to fewer disruptions and a better experience for both operators and guests."
The commercial stakes are high for any chain operating at scale. A single stockout on a high-velocity menu item means lost revenue, forced substitutions that erode average check and guest satisfaction, and supply chain staff pulled off strategic work to handle crisis triage. The problem compounds in franchise systems where operators are accountable to both brand standards and their own unit economics.
Market Context
Sightline OS positions Continuity AI as purpose-built for the proprietary supply network data of individual chains — a contrast to generic AI tools that lack the supplier lead-time and distributor fill-rate data needed to generate actionable recommendations. The platform's customer base already includes Din Tai Fung, L&L Hawaiian BBQ, and Goop Kitchen, alongside Bonchon, suggesting traction across both full-service and fast-casual segments.
The launch comes as restaurant AI adoption accelerates across back-of-house and supply chain and operations functions, with operators under sustained pressure from ingredient cost volatility and distributor network disruptions. "Supply chains are becoming volatile and experiencing disruption at ever-increasing rates," said Yusha Hu, co-founder and CEO of Sightline OS. "Nothing is a more expensive and urgent supply chain problem for a restaurant than when it doesn't have what it needs to serve its guests." Continuity AI is available now within Sightline OS for existing customers and prospects evaluating the platform.
