New Concept, New Format

Four Seasons Resort Maui at Wailea has opened Pantry Maui, a collaboration with Los Angeles lifestyle brand Madhappy that represents the first standalone café format for the Pantry food-and-beverage concept. Operating daily from 6 a.m. to 6 p.m., the all-day grab-and-go destination is open to both resort guests and walk-in visitors — a programming choice that positions it as a revenue-generating amenity rather than a closed hotel benefit.

The opening is part of a comprehensive property-wide transformation at the 383-room oceanfront resort. The broader renovation arc includes refreshed guest rooms and suites slated for Q4 2026, a reimagined Club Floor that debuted in May 2026, and the July 2026 opening of Kai Holo Spa. Adding a branded café concept extends the asset's lifestyle positioning and diversifies on-property F&B revenue beyond the resort's four existing restaurant outlets — Ferraro's, Spago Maui, DUO Steak and Seafood, and KOMO.

Menu and Sourcing Stack

Executive Chef Ryan Schelling and Executive Sous Chef AJ Thalakkat collaborated with the Pantry team to develop an island-exclusive menu, a co-creation model that reflects a growing trend in luxury hotel F&B where operators partner with outside culinary or lifestyle brands to differentiate dining programming. Maui-only beverage offerings include a Mango Sticky Rice Matcha Latte and Banana Coconut Latte. The food menu spans house-made pastries, sandwiches, salads, smoothies, açaí bowls, and gelato — the kind of high-throughput, low-friction format that maximizes covers without the labor overhead of a full-service restaurant.

The sourcing architecture is brand-forward: coffee is roasted by Los Angeles-based Loquat under a signature blend created exclusively for Pantry, while ceremonial-grade matcha comes from Nekohama. Cold-pressed juices and tonics are supplied by Maui Juice Co., and chocolate is crafted from Hawaii-grown cacao sourced through Lonohana Estate Chocolate. Exclusive local sourcing partnerships of this kind are increasingly used by luxury operators to anchor a sense of place and justify premium average-check positioning.

Retail as a Revenue Layer

Beyond beverages and food, Pantry Maui incorporates a curated retail component — Maui-exclusive apparel, accessories, drinkware, and specialty packaged goods. The retail overlay mirrors a model gaining traction in upscale hospitality, where F&B outlets double as branded retail touchpoints that extend guest spending and create post-stay brand touchpoints. For operators tracking revenue per available room (RevPAR) and ancillary spend, a café-retail hybrid can improve per-guest yield without adding significant square footage.

For Madhappy, the Four Seasons partnership accelerates Pantry's expansion into standalone hospitality destinations. The concept already operates in West Hollywood, New York, Malibu, and Tokyo, with additional locations in Seoul and Aspen announced. Embedding in a five-star resort property provides built-in foot traffic and an affluent consumer segment that aligns with the brand's positioning. "Pantry has always been intentional about the experiences we create and the communities we become part of," said Peiman Raf, Co-Founder and CEO of Madhappy.

For hospitality operators evaluating branded F&B partnerships, Pantry Maui illustrates how lifestyle collaborations can function as both a guest-experience upgrade and an incremental revenue driver — relevant context for any hotel food-and-beverage or restaurant concept development strategy at resort properties.
