Hot, automated Mexican food is now live in the concourse. Tres Picosos, the Colorado-based woman-owned Mexican food manufacturer, has partnered with Evolvending to deploy its Tres Locos brand on Evolvending's self-service airport dining network — giving travelers 24-hour access to hot burritos and tacos without a staffed counter in sight.

The launch begins with a kiosk at Minneapolis-St. Paul International Airport (MSP) Terminal 1, Concourse G, a Delta Air Lines hub. The Tres Locos menu includes Bacon Breakfast, Chicken Fajita, Picadillo Beef, and Pork Carnitas burritos, plus street-style tacos — all served hot on demand. Tres Picosos CEO Jane Hartgrove framed the move as a direct answer to a persistent gap in airport foodservice coverage: "Customers can get delicious Mexican food exactly how and when they want it — hot and ready — even when the rest of the world is closed."

Platform Footprint

The Tres Locos SKUs are also rolling into existing EvolveCAFÉ locations at Boston Logan International Airport (BOS), Charleston International Airport (CHS), and Southwest Florida International Airport (RSW). Evolvending describes its technology stack as a combination of smart hardware, intuitive software, and data-driven operations — a cloud-connected platform that manages inventory, product freshness windows, and consumer-facing touchscreen ordering across all locations simultaneously. That kind of centralized visibility is increasingly critical for multi-airport automated retail operators managing diverse brand portfolios and variable traveler throughput by time of day and season.

Valentina Ellison, CEO of Evolvending, pointed to brand curation as a core competitive differentiator: "One of the strengths of our platform is our ability to bring together a diverse portfolio of brands that reflects how travelers want to eat today." Mexican is consistently one of the highest-demand QSR categories in the U.S., making Tres Locos a logical addition to a platform that already spans breakfast, snack, and fresh food concepts.

Market Sizing

The timing aligns with significant tailwinds in automated hot-food retail. According to Vending Times, the hot food vending machine industry across the U.S. and Canada is projected to reach $9.6 billion by 2036, up from $5.5 billion in early 2026 — a trajectory driven by labor cost pressure in high-rent airport concession environments and rising traveler expectations for always-on food access. For operators and airport authorities, automated dining platforms offer a path to expanded daypart coverage without proportional increases in labor spend, a calculus that has accelerated adoption at major transit hubs.

Tres Picosos brings established foodservice distribution infrastructure to the partnership, with nationwide reach through Dot Foods, Inc. and KINEXO, and existing presence across QSR, convenience, and grocery channels. That supply chain depth is a practical enabler for multi-airport scaling — consistent product quality and replenishment velocity are operational prerequisites for any automated dining deployment. The company says additional airport locations are planned in the coming months, suggesting Evolvending's network expansion is actively in motion rather than a single-site pilot.

For hospitality technology observers, the partnership is a live example of how automated food kiosks and ghost kitchen-adjacent models are reshaping airport concession economics — and how established food brands are increasingly treating self-service digital ordering platforms as a legitimate, scalable distribution channel alongside traditional brick-and-mortar footprints.
